How good is the Melbourne weather this week!
It feels like spring, not autumn and that calls for a yummy brekky recipe you can enjoy on the warmer mornings. (or even as a snack or brunch really…)
I actually tried my very first acai bowl 2 weeks ago and fell madly in love. So friggin yummy.
What is ACAI you ask? Well, I did some research and here are the main things you need to know –
It’s an amazing source of antioxidants, fibre, iron, vitamin A, heart healthy-fats, and minerals.
And how pretty are they??
So without further ado, here is the recipe…
2 cups frozen strawberries
2 frozen chopped bananas
4 tablespoons acai powder
1 cup unsweetened coconut milk (or dairy free milk of your choice), plus more as needed
2 tablespoons nut or seed butter (I used tahini)
1/2 to 1 tablespoon honey or rice malt syrup to taste
Topping Ideas: (you can use as many or as little as you like)
Fresh fruit, sliced (eg bananas, strawberries, mango and kiwi fruit)
honey or rice malt syrup
Unsweetened coconut flakes
Chia or hemp seeds
- Add the frozen fruits, acai powder, milk, nut or seed butter, and honey to a blender. Blend until creamy and smooth, adding extra milk as needed to get the blender running. Aim for a frozen-yoghurt consistency (it should be thicker than a smoothie).
- Spoon the acai mixture into bowls and top with sliced fruit, bee pollen, and the toppings of your choice.
