This delicious recipe was given to me by my beautiful friend Diana.
It’s so yummy and so so good for you.
***You can change the potato to sweet potato if you prefer. (It’s just as yummy)
INGREDIENTS
- 1 whole broccoli
- 200 grams beans or frozen peas
- 500ml vegetable stock
- 2 cloves garlic
- a small knob of ginger
- 1 large onion
- 1 medium potato (or sweet potato)
METHOD
In a pot, soften the onions (so they don’t get too golden,
Add potatoes, garlic, ginger and stir through.
Add stock and cook with lid on for 5 minutes.
Add broccoli and beans/peas, cover and cook for a further 15 – 25 minutes.
Add salt and pepper to your liking.
Puree to make soup.
