Winter Warming Greek Casserole Recipe

GREEK CASSEROLE (gluten free, dairy free, paleo – omit potatoes)

I’ve noticed my fave foods are the ones that aren’t exactly the prettiest , the ones you throw together in one pot.
The Mediterranean diet is meant to be one of the healthiest ways to eat and for us folk in the southern hemisphere it’s FREEZING! So this is the kind of stuff we should be eating…

INGREDIENTS 

  • 500g diced beef
  • 8 medium potatoes 
  • 300g frozen peas
  • 3 garlic cloves
  • 1 onion
  • 450ml tomato passata
  • 900ml water (this is approx)
  • Salt
  • Pepper
  • Basil to taste                                                                       

METHOD

Heat olive oil in a heavy based large saucepan over high heat and saute onion and garlic until transluscent.

Add beef and brown all over 

Once beef is browned, add potatoes and stir for a minute

Add tomato passata and water and bring to the boil

Reduce heat and simmer for one – 3 hours (one is plenty but 3 is good too)

Add peas and cook for another half hour

Season to taste

Check often and add more water as required

Let stand for 10 minutes before serving

*Serves 6 – 8
*Can be served with rice to feed more people
*Potatoes can be substituted for carrots
