Chicken Broth

My favourite thing to do with food apart from eat it is to stretch a meal into a couple of days to save myself constantly cooking and also to reduce waste.

Whenever I cook or buy a roast chicken I make broth the next day with it.

I have been eating/drinking broth of all kinds since I was a baby, my grandmother used to feed it to us almost daily and now I make it for myself and my kids all the time.

I’m sure many of us have memories of being sick and being made a big batch of soup by our grandmothers, my kids get soup from theirs too…there’s a reason for that.

There are many health benefits to broth. It contains gelatin which helps to heal a leaky gut and collagen not only can repair and reduce inflammation but also supports skin, hair and nail health.

It also contains calcium, magnesium and phosporous and is super cheap to make. Just use whatever veg is almost ready to be thrown out and voila! No waste!

Here’s the recipe. (Also the amounts are just a guide, just fill your pot with whatever you have, the more full it is, the more flavour it will have)

INGREDIENTS

1 whole chicken (preferably organic) OR leftover roast chicken

1 onion

6 or so cloves of garlic

4 stalks celery

2 zucchini

3 carrots

dash of sea salt

1 tbsp apple cider vinegar (to draw out the minerals from the bones)

METHOD

Put all ingredients in a large pot and top with filtered water.

You can cook for 3 – 10 hours.

If it’s fresh chicken you’re using and not leftovers, remove meat from bones and set aside. Also if you have only cooked it for about 3 ish hours you can save some of the veg, pop it in a food processor to puree it and add it back into the broth once it;s been strained, otherwise discard veg/leftover chicken.

Strain broth.

Easy as!

You can freeze or keep in the fridge for a couple of days and either drink as a cup of broth, or make soup with the broth.

The way I make soup for my boys is I just add about a cup of little soup pastas (sometimes gluten free, sometimes not) to the broth in a small saucepan and cook for around 10 – 15 minutes. It is and has always been their FAVOURITE meal.

You can also add some cut up vegetables to the soup as well.
